The Lone Oak Tree Series:
The varietal series of the Winery is named after the famous tree that stood at the center of the four kibbutzim which were established in Gush Etzion before the War of Independence. Until the return of Jewish communities to the area, those who looked from afar with longing at Gush Etzion, would see the oak tree. Upon returning to the place, this “Lone Oak Tree” became the symbol of the renewal of the communities of Gush Etzion.

The growing process: several carefully selected rows of the Gewürztraminer vineyard were not harvested together with the rest of the vineyard at the usual Brix (sugar percentage) of 23.5-24%, and continued their ripening for another two and a half weeks. Only when these grapes reached 28% Brix they harvested and fermented. Towards the end of the fermentation, the fermentation was stopped by a cold blow and the addition of sulfur, So the wine has a slightly higher alcohol level than usual as well as a higher sugar level.
The wine is a dessert wine that can be a wonderful addition to a meal.
